You’ve been packing. You’ve been moving. You’ve been getting organized. You can’t handle the thought of ordering pizza again. You need something healthy and you’re anxious to use your new kitchen. Here’s a recipe for a quick meal if you’re too overwhelmed by your relocation to think of something to cook.
Spiced Black Bean & Avocado Tacos
2 cans of black beans with liquid
1/4 teaspoon black pepper
a pinch of chili powder
1 Tablespoon coriander seeds
1 teaspoon cumin
3 – 4 avocados, sliced
juice of 2 large limes
2 Tablespoons local honey
1 cup of crumbled goat cheese
cilantro, chopped
corn tortillas
Instructions:
In a saucepan combine the black beans with their liquid, black pepper, chili powder, coriander seeds, and cumin. Simmer on the stove while you prepare the rest of the meal. Combine the lime juice and honey and mix well. Slice the avocados. Chop the cilantro. Warm the tortillas. Get out the goat cheese. Present all of the taco ingredients and let everyone make their own tacos by placing beans, avocados, goat cheese, cilantro, and the honey/lime sauce on a tortilla.
